Could be platinum or anything, just no gold

What do you mean by "luxury watches"? There are tons of luxury watches in stainless steel, probably the vast majority of what I would call the "luxury" market. What do you mean by luxury?

Umm I would say something that is well known to be a good brand for watches? And on the high end side as he got me something in the price range for $8-10000 so I would like to return the favour

Ok plenty of Omega's, Cartier's, Brietlings, ICW's made of stainless steel in that price range. Need one rec, I'd go Omega Speedmaster Professional or Cartier Santos in steel.

Going manual wind with something like the Speedmaster is a good call. Rotors are often made out of gold at this price point.
