I think going back to requiring home economics in schools, and in fact beefing it up to actually teach people how to cook and more about nutrition, could go a really long way towards helping people in the US eat more plant-based foods. A lot of people just don't know how to cook them. I've personally known more than one person who has flat out said that they don't like vegetables, but what they mean is that canned crap their mom used to feed them. Or plain, steamed vegetables.
I wouldn't think I liked them, either, if I thought you couldn't use seasonings on them and cook them various ways.
