How is it that "the best defender in the world" gets 40+ on 70%+ hung up on him literally every single time he faces Giannis, Embiid, or Jokic?

Jokic had 22ppg on 53% in 2020

AD isn't guarding those guys for large portions of the game. The main reason is because his defensive value is greater as a help defender.

Also, Embiid actually only has 2 games above 30 points against AD (though tonight will likely make it 3 games with 30+).

Also at the end of the day, even the best defenders can get cooked by excellent offensive talent.

For example. everyone says Hakeem locked up Shaq in the 1994 finals, but Shaq put up:

28/12.5/6.3/0.3/2.5 on 59.5%
