oh yeah, you can definitely cut them into pieces before planting. I started with ONE, cut it into pieces, and now I have a whole little thicket of them. I'm not sure what the theoretical limit on that is though, like how small of a piece will grow

Just a couple years, and that's with regular harvesting!
