No matter how precisely you mill the threads and the case, the surface will always be slightly uneven microscopically. Water can, when under pressure, enter the watch through the holes these uneven surfaces make.
A gasket is soft and squishy, and when you put it between two such uneven surfaces it will fill the unevenness, preventing the water entering the watch.
