This thing is pretty good at figuring out my writing. One thing I don't like is it will not keep the same "format" I guess I will say.

I use this for notes and I have things on the page and layout my mind wants to see. It seem when I do the conversion it will left justify everything and I don't like that to the point I will not convert to text.

Any suggestions?

Really the best thing you can do is submit a suggestion. I actually submitted one earlier today about something similar. They're usually pretty good at implementing things the community asks for
