I've had really inconsistent results with usb-c docks on Linux. I started with the 1240p framework, and am now on the 7840U. I've tried ~5 different docks. Some didn't work as advertised as far as supported displays. Some worked intermittently. This Anker dock is the only one I've had consistently work. It's been working with no issues on my 7840U Framework 13, with Archlinux installed. It drives 2 monitors at 2560x1440 60hz. Both of my monitors are Displayport as well, I use DP->HDMI cables and it works fine. PD works as well.
Have you tried a Caldigit TS4? Was that one of the docks that only worked with one monitor?
