X-Plane 11 is listed as native Linux game. It should not even need a Windows compatibilty layer (i.e. Proton) to run. I'm not sure why steam downloaded the Windows version. In Steam, open the game properties and try to get it to download the Linux version.
Baulders Gate om Steam Deck should run smooth enough based on other Steam Deck users on Protondb. Idk, update your drivers and maybe change the proton version you are running?
