Just transferred over my domain. Pretty impressed by their security and the fact they have an account delete button right there in settings.
Gotta say, the process was supposed to take up to 5 days but my old registrar completed it in minutes. Pretty impressive! So shoutout to Namesilo for being pretty damn stellar.
Edit: Namesilo deleted my account in minutes of sending a support request, so shout out again for being so responsive!

I've had great luck with Dreamhost. The cost is fairly minimal, and they don't force any analytics service on you.
Second Dreamhost, been using them about 4 years now.
1984.hosting is great, I've been using their service for a couple of years now. They're based in Iceland (really strong privacy laws) and have options for crypto payment if you don't want to reveal yourself through your payment method. As with all registrars, they'll need an email address (or alias) to reach you at in case there's a domain dispute, and while they also ask for address and phone number, they've never had me actually verify anything beyond the email. If you give a fake address and phone number, then you'll just need to understand that if someone challenges your domain, it will be very difficult for you to prove ownership with fake details (not as if that's likely to happen unless you're allowing the site to be crawled by a search engine though). I only have a domain through them, not a hosted webserver, but they seem to have good options for hosting. I know that they handle Let's Encrypt certs automatically for hosted sites, and they run off green energy (geothermal) if that matters to you.
All offer domains and hosting/VPS which you can use Monero to pay for.
Things to bear in mind: totally anonymous domain purchasing means you have no real control over it as it can't be proved you are the owner. If the registrar fucked you over, you lose the domain.
I'm using OVH for the domain name and they offer a free 100mb hosting and one email address with every domain name. It can be a good option to start of you are planning to have a very light static website.
Hetzner for both. For domain registration, Najalla is also good and you can pay using Monero.
Unless you're wanting to use Plex with it.
I have used Plex with it, and I am using Jellyfin, now. I have had no issues.
Plex started banning Hetzner not too long ago, jellyfin doesn't call home in the same way and should keep working.
ICD Soft
Just enable certs and the rest is automated. Analytics are private and can be enabled/disabled. Analytics are not third party. It's pretty cheap. Super easy to use. Good email services too. Can register your domain with them or transfer to them or external.
