Hello everyone! For a while i’ve been using Okular, but I feel like the UI is a bit crowded and it's difficult to change the appearance of the book itself. Are there any minimalist/simple epub readers for Linux (perhaps something akin to Apple’s “Books” app?)

Calibre is my goto. It can be somewhat complex but is feature-rich

Sumatra PDF is easily my favorite, but you'd have to use Wine.

for simplicity I think sxiv supports ebooks

Don't know if you're into that kind of minimal, but lately I've been using epy and it is just amazing.
