I came to the conclusion theres always gonna be another grail, so I settled down for the moment. Im enjoying my watches and maybe Im gonna get at max one watch per year or every two years. I try to have at most 7 watches at a time, more than that and theres always some that just sit in the box

Grail in terms of "this is the watch that I've been dreaming of the earliest", Speedmaster. Its a work in progress - I have other watches I want first.
The grail watches that I want right now would probably be the JLC Master ultra thin moon in gold or VC patrimony, both around 30k in Canada. I'll get them eventually, but I'm not sure when it'll be.
Grail watch that I want and know realistically I can't obtain for one reason or another? Lange 1 in blue and black or Patek Grand Complications. I don't think I'll ever get them given how likely it is that they'll put me in a financial disadvantage, or whether I can buy them in the first place, but I can try and work towards them regardless.
My mini grail rn is either A Tudor Black Bay 58 or an Oris Aquis Date.
At this point in my life it will probably be a couple years at best.

Then last month I bought it… and I’m already trying to decide what my next grail watch is lol. That happened way too fast.

SMP 300M was my grail and I got it a few years ago. For anyone wondering if you can do it, you can! Totally worth it. I’ve only bought one watch since and I really don’t wear it, probably shouldn’t have bought it!

Well. This could be a long story, explaining that I kinda have my non-graily grail already. Or that the closest thing to a grail that I might actually pay up for at some point, for me is the Tudor Pelagos 39mm (as I feel that's how far I personally could go without babying the watch, or feeling stupid spending too much money on it.) Or that some other watches may become the grail.
However, the short story is that what basically is my grail, is the GS SBGV229 (or one of the other colour variants). And it's out of production... For a while now afaik. And, as I personally also want my grail watch to be bought new if I am to get any such piece, combined with me not being in the position to buy that kind of watch in the coming year or two: It's pretty much not going to happen.
Unless GS releases a new version of that watch that is. Sadly, the steel version which is much more permanent in the GS lineup, while very similar, is still not a grail for me in the same way. I simply think I won't be very fond of the weight of it on the bracelet, and I'm slightly worried it might be ever so slightly too dressy too. The titanium version is just about far enough over on the slightly sportier/casual side of things, due to the different design of its bracelet combined with the ever so slightly more subdued nature of the metal itself.
Speedmaster professional. Likelihood is high as long as I don’t die in the next 5-10 years.

Honestly, I don't think I could ever spend that kind of money on just one watch compared to all the other hobbies I could use that money for. I feel like I cap out at 30k is on 1 is the limit for me. Anymore and it cause got too much money and don't know what to do with it all.

Three of them: GMT Master II (Batman), Black Bay 58 (black), and a Speedmaster (sapphire).
I'm currently hunting for a better job in a similar field to my current one, but which pays better. Once that happens, I can probably get all of them within a year.

My grail watch is the Sinn T1-B EZM14. At this point, my chances of owning one are slim and none.

My grail was a two-tone Sub. I got it. Now I'm looking for an ALS 1815 or ALS One... or an AP Royal Oak... Or PP World Timer... someday I will likely be able to get at least one or two, if my wife is cool with it. However, after having kids, my priorities changed. If I never get them, that's okay. Because there are so many things I'd rather do, like take my family on nice vacations, or other experiences. I have a double digit watch collection, I can only really wear one a day anyway, and half the time I wear an Apple Watch now. As I've gotten older, spending on experiences rather than goods has been more important to me. That being said, I've picked up a few Rolexes, Cartier, etc since the pandemic because we couldn't really go on vacation... so. To each his own!
Watch that I want next and will likely get one way or the other: H moser streamliner, green or salmon, probably within the next few years
Grail: A Lange zeitwerk, maybe someday if my current life trajectory continues at a linear rate but not any time soon
Holy grail: FP Journe Vagabondage 3, probably never unless my life trajectory exponentially increases
Grail watch is probably a Connery-era Bond Submariner. But you know...that's not gonna happen.
my grail doesn’t exist yet (as far as i’m aware). there are 2 big boxes i want to tick: traveler GMT and a spring drive. i want the ultimate (to me) expression of each, and while it’s possible it could be one watch ticking both boxes, i think it’s more likely to be two separate watches.
GMT- the most likely candidate is if tudor brings the updated design language from the refreshed bb41 burgundy to the rootbeer. i hope they do it and i think there’s a decent shot, but not for a few years (or several).
spring drive- the tough thing about this is that grand seiko’s design language is too formal, even their sports watches. i like the watches but those designs don’t fit my style very much. they do have a couple that are nice, like that big diver with the maxi cathedral hands. the perfect GS spring drive for me doesn’t exist yet, but i like the direction they’re going. it may be more likely i’ll find what i want in the prospex LX line. but in any case there are no dealers in the seattle area for GS or LX for me to try on (that i’m aware of).

I have two. A Breitling Superocean Heritage 44 Chrono, which I plan to buy for myself on my birthday next year (hitting a number with a zero 😉) and the Dark Side of the Moon Speedy which I am not sure when or how I will ever get. Maybe for a big anniversary or something.

Thanks for understanding that a grail is not just "the nicest watch that I can afford right now". A grail is a quest. Far too many tech/finance/inheritance bros on here get their regular annual bonus and post "grail achieved". No, dude, that wasn't even a side quest for you.
A grail isn't necessarily the next watch on your hit list, it's the watch that gets you motivated to achieve something big, and when you picture owning it, there's a whole set of achievements and values that go alongside it, like the financial security which meant you could afford it without stressing the household budget.
I hope to have a Moonwatch in the next five years, but I don't see it as an exit watch just yet. If I have more money than that right now, it's going on the mortgage, on a car, holidays or even a second home one day. If I ever get beyond the Omega, it'll mean I've really nailed all my long term goals.
If you can find it, own it, have it... it's not a grail.
