Patek Philippe celestial 6102R and maybe one day but not anytime soon unfortunately.
The watch I have most obsessed over, and was recently fortunate enough to be able to purchase, is the Reverso Duoface (classic medium small seconds).
I remember seeing ads for early versions of the Duoface in glossy magazines when I was in my teens, but what piqued my interest in owning a Reverso was, ironically, Watchfinder's video about the Baume et Mercier Hampton 10528—which totally sold me on rectangular dress watches, and which attracted a few comments mentioning the Reverso as an obvious inspiration for B&M's design.
For nearly three years I considered all the many different options: vintage or modern? Monoface, duoface, memory, or display caseback? Of course the Hybris Mechanica Quadriptyque and Hybris Artistica Gyrotourbillon are probably my true grails, but even eliminating all the completely impossible choices still leaves so many amazing models to choose from.
Eventually I narrowed it down to a set of four models all of which were reasonably available (but only one currently in production) and made a spreadsheet to compare them. Obsessive checking of review videos followed, mainly to try to get a sense of whether the two "large" models would fit on my rather slim wrist; eventually after trying a few different models on I decided that the medium would be a better fit. That narrowed it to two, and although I love the front dial of the Q3838420 I much preferred the back dial of the current Q2458420.
Unfortunately the medium size is relatively rare on the pre-owned market (especially in the UK) and this past May when, after many months of scouring eBay and Chrono24, I saw a post here that JLC was going to be putting their prices up again I bit the bullet and enjoyed a very delightful but mildly impoverishing afternoon at the JLC boutique.
Of course no grail is ever an end, so what next?
Curiously enough it's probably the Mondaine Stop2Go. There's a new 41mm version available now available for preorder—and I might—but what I really want is one of the early, ~36mm versions, now long out of production and rare enough I've seen only one come up for sale in the last several years.
Even more humbly, I also want a SARB033—but as a matter of principle am unwilling to pay more than its original MSRP, so this quest is one I expect to continue for some time, despite prices at last moving in the right direction.

Now the closest thing to a Grail it's the Fortis B-42 Cosmonauts (yeah, there's a pattern here), and I think a used one could arrive within a couple of years, maybe earlier if some money matters turn out the right way.

Realistic grail (even if unlikely) is Rolex 118206 or similar. Win the fucking Powerball grail is the salmon-dial one on dodgy Maron's site. But if you're really rich you DGAF about watches IMO

I would consider satisfied once I manage to get a F.P.Journe Chronomètre à Résonance. That will be the epitome of watching collecting for me.

Ressence Type 3. Probably not gonna happen but a boy can dream.
Some may scoff at it, but a titanium G-Shock square. Primarily the black & red MR.G model. Chances of me getting one? Super low, it's just too expensive. I can afford it without it hurting, but I just can not imagine spending that much on a watch.
Until then I am vibing along with my stainless steel models.

I like classics, whether it's food, cars, music or whatever. So a variant of a Rolex GMT Master II or VC Overseas. Can't imagine a scenario where I'd ever be able to get one.
Love it too! Only hope it comes in a 40 mm. Do love the 38 El Primero tho.
There’s a lot I could classify as a grail piece. But for the sake of brevity, I’ll only pick a couple.
Probably a George Daniels or Roger Smith piece. Figure shoot for the moon, and at worst you land amongst the stars. There’s also a limited edition, JDM Royal Oak in Platinum with diamond indices that I adore. Love the Lange Datograph. Patek 5270p and 5204p. I could go on, but I won’t - and there’s even more that aren’t grail watches.
Likelihood? I’ll have the money one day - I’m young, and I’ve got a career in a high earning field - just a matter of if my tastes have changed or not by the time I can afford these watches.

My grail is the Omega Speedmaster Professional in Hesalite. Been my grail for a decade. Starting a new job soon so I’m targeting to get it my next year

Royal Oak Perpetual, platinum with the ice blue dial. I’ll be able to buy it within the next decade assuming nothing catastrophic happens to my business.

I don’t want to be cliché, but either a plat day-date, a jlc polaris perpetual calendar in rose gold or an aquanaut.
Money wise i’m fine for either of the 3, but the aquanaut and day date are my true grails of those thus i’m stuck bc i need to lick ass to get them.
A Grand Seiko Sea of Clouds.
I went to a watches and whisky event at my local Authorized Dealer who has basically every brand except Rolex. I had a fantastic time talking to the brand representatives and looking at all the beautiful watches. The Zenith counter was extremely fun!
The VC 222 in stainless, one can dream.

Great watch. This is on my list to acquire one day. The grails I would love but probably won't be able to get are a Lange 1, Vacheron Constantin, or AP code 11.59 Perpetual Calendar.
I’d really like a 36mm Rolex Explorer. Likely? Don’t know. Don’t care. It’s nice to dream.

whenever i see this zenith i think it’s better than the rolex Daytona. Idk just seems more fresh and modern.
