If I had rights to a shop/restaurant franchise, could I get someone to run a location while paying me royalties; while also owning the building the business will be ran at, and charge the “owner” rent?

I’m not sure… just a question I had, is it better to pay taxes personally? I was thinking maybe just extra money on the side, but what else would this effect?
