If its a month rollover, but the watch is still time set correctly, then quickset, always.

If its an auto I haven't worn in a bit and it needs to be totally set, then quickset to date (-1), roll the time to advance to correct date (+/- 0), then adjust to correct time. That's just because it helps me avoid that pesky "oops" of not being sure if you set to AM or PM, and having the date wheel move at noon.
