for your second point my "server" is just as windows 10 pro install, I run hyper v for my VM's I prefered it since is just added through the windows add features

Why can't you just install it in WSL2?
If you get a bit deeper into virtualization you might want to consider proxmox. Proxmox can just backup entire VMs and restore them.
If you have docker desktop installed, try linuxserver's overseerr container.
