Is this really bicycle-related? Like sure, the article mentions an exercise bike, but I don't feel like this post really fits the spirit of the community.

You could edit your post to add a paragraph to try and relate this to bicycles!

VO2 max is an important stat in training, which a lot of us care about when we cycle

Sure, but you gotta draw the line somewhere. Like if I post a picture of my lunch on here, with the justification that calories and nutrition are important for cycling, I think that'd be off-topic.

However, if I shared the same picture and asked people what are their favourite pre and/or post-ride meals, I think that'd fit in better here.

It was part of biology in fourth grade. Not particularly in depth, but it was there
