Security concerns? Are you adverse to the idea of WiFi? Do you just not have Internet? Or are you just interested in a single screen on a wall in this house to interface with the doorbell?

I was asked something similar from a mate in the pub. He wanted a camera in his shed about 300m from his house.
I can talk about microwave links and trenching cables in pipe as much as I want. He just needed a simple solution that won't bite him in the arse.

Do you know if they want this simply so they don't have to walk downstairs, or do they want to view it on their phone?
This could be for an apartment they own and they just want to offer their tenants something so they can see who their buzzing in for all we know.
Helpful is figuring out what they want and not blindly going into details on solutions that at best waste their time reading or worse lead then down a suboptimal solution.

Just buy a conventional webcam/ipcam and use that in addition to a conventional doorbell. If you're not wanting it to be Internet connected, you aren't going to be using away from your home.
What? That's not how networking works. Your devices can be disconnected from the internet and still be accessed remotely.
Completely disconnected from the Internet means that packets can't make it from the device to the Internet. You achieve this through physically separate networking, VLANs or simply relevant firewalls. With a stateful firewall you can get picky with restrictions on TCP SYN packets to get fine grained control of who can establish a connection. I felt this level of detail was inappropriate for OP's self proclaimed technical proficiency.
Possibly OP means Internet connected, but not using a third party service to handle the feed. If they do, then they can ignore my comment and select something more appropriate from other helpful contributions.
