Fun Times with Weapons, Pandemic 1 & 2, the Magic Bush, basically any episode with Craig for some reason. I also love the episodes centered around the goth kids like Goth Kids 3: Dawn of the Posers, but I worry that a lot of the jokes wouldn't land with people who aren't involved with the goth scene.

Little Crime Stoppers is my favorite episode
“Help, my teenager hates me!” is a good recent episode that focuses on the boys being frustrated with obnoxious teenagers while playing airsoft. It’s a really funny episode that shows the boys acting like the kids they are supposed to be.
Well they're kind of acting more like parents to those damn teenagers but it's a great episode nonetheless
Another good one is the recent one where they start that hotdog store. It has a serious message behind it, but it’s pretty fun.

First episodes that come to mind, but honestly most of the very early seasons focus on the boys and just crack jokes
Honestly the first 15 seasons or so.
There are more non-political episodes than there are political ones. Especially in those seasons
If I had to pick a peak season though I would pick either season 12 or season 13.
They're both hilarious from first episode to last but I would recommend 13 over 12 because that's the first introduction to Coon and friends(which is about is as apolitical as you're going to get), the WTF wrestling episode, the queef sisters, Dead Celebrities, Fat-Beard (Somali pirates) and Butters bottom bitch.
It's one of my favorite seasons and I think everything up through season 15 is more silly than political but after you get into the more recent seasons you start to see more involvement because of the political nature of the world.
One of the great things about South Park and the six Days to air method of how they produce and come up with these episodes makes them first in line to get on top of current events, and with everything they've got to choose from in the past few years their cups runneth over.
So they've got to fine-tune what they think will be more receptive to the audience and I think that's really difficult to do right now because of the way the world is and that's why you see specials like the Panderverse, The COVID-19 specials etc. I mean they're touching on all the big issues that are going on in the country and the world to a lesser extent. So it's kind of hard for them not to be more political as the show ages. People are becoming more divided by politics and are more involved in politics than ever, whether it's in good faith or ignorance, they're there.
So they're giving the audience what they want, if you will.

Woodland Critter Christmas and Good Times with Weapons are currently my two favorite episodes of all time.

The first 5 seasons or so are almost completely like that and those are my favorite, honestly. There is some nostalgia mixed in for me because I grew up with the show but you should absolutely try the early seasons for that type of vibe. There will be a decent amount of religious jabbing and social commentary but not relentless political commentary like modern seasons.
A lot of the old episodes have period-specific pop culture references that definitely won't be as funny for you, unfortunately, but based on your description I would strongly recommend episodes like:

- S3E4 - "Jakovasaurs"
- S5E6 - "Cartmanland"
