Digitwl nomads don't stay in hostels. That's more of a backpacker thing.
Can you hang out with people who drink but just do other activities where they are not drinking?

Do you mean somewhere authentic? Because pretty much most of Spain is touristy and international.
Join 'Expats in Colombia' facebook group. You'll definitely get this answered well and anything else Colombia related.
Since you're so keen on learning the language and culture, avoid Medellin IMO.
