I use Void Linux. I switched from Arch btw because I liked their package manager, was curious about their init system runit, and still wanted a rolling release. I've used it for a little over a year now and overall I've been happy.

 

Apologies if this is a dumb question. I use a different VPN instead of Mullvad. If I install that VPN's plug-in and delete the Mullvad's VPN plug-in would that make me easier to identify since I've made changes to the browser?

I would suggest setting up a VM trying a few distros that are known for having a lot of documentation and active community members to help. But more important than the distro is to try out different Desktop Environments. This way you can customize your user experience exactly how you want it. Also when you get frustrated (and you will) remember you are trading Windows' convenience for Linux's freedom, privacy, and customization.
