I've noticed that for some reason, if I put regular stereo speakers next to both of my ears and play music at low volume, it sounds better ("more 3D") than regular stereo headphones (probably because the brain interprets the sound in a "real-world way", using the shape of the ear etc). This is particularly apparent when you listen to stuff light Nightwish but the effect really varies from song to song. So I'm trying to find headphones that would have a similar effect.

I've looked at the different standards for spatial audio (dolby atmos, etc) and I know some headphones have this weird physical geometry where they go around your head and have 5.1 channel input but I don't know which ones I should look at for my specific need.

Air conduction earphones, neck speakers. Look into these. I know what you're talking about
