No free service is good if you care about privacy.

Well unless i self host but im not doing that for email, no smarty enough

Many smarty enough people still find hosting service worth paying for.

If you grab a cheap domain, many domain registrars throw email hosting in for cheap or free.

What exactly does that mean, just buying a domain name also gets you email ? And I can just use it through Thunderbird ?

When paying for a hosting it could include email service, but I've never used it. Probably better setting up your own email server or similar.
