Im gonna install Ubuntu as Os (i want to learn linux more) But whats the best way to run Home assistant and other vm's. I have a license for VMware from school, so is a good idea to start running HA, pfsense from there or best to go with something like proxmox?

I know docker is also a solid option but i want to have to configure more things the "hard" way, to learn more

Having owned a Synology for nearly a decade, I would recommend looking into Unraid. It’s far more flexible and you can build one fairly inexpensively from an older workstation. I used a Thinkstation P510. 14 cores, 64gb ram $200.
