I see the option for all, subscribed and local but I can't seem to figure out how to find a list for a different instance

Not all mobile apps allow it because it's a little tricky with the Lemmy APIs.

Liftoff used to have thia feature but it's discontinued;
Summit has added this feature, you can access it by "Community info" -> "Instance info" -> "Communities" when you are on a community on the instance you want to explore;
RaccoonForLemmy has it in the "Instance info" sheet tapping the "⋮" button in the top bar when you are on a community of the instance you want to explore;
I couldn't find anything similar in Jerboa, Voyager, Thunder and Eternity, don't know about the other ones.
