Pretty much the title. I've seen plenty of people using proxmox and truenas but I don't really see many homelab users running Ubuntu server or something similar? Do many people actually use it to run docker or any containers on their machines? Just curious.

I'm rolling Ubuntu with docker. Still run some VMs for experiments via QEMU. My 1U server in my rack is running Server 2019 that has stuff I like to keep running as much as possible. The 2U on Ubuntu has been a bit of a pain in the ass to reboot. It often won't auto-import my ZFS pools on boot. Does it manually every time though.
