Some MVNO's for Verizon include Visible, US Mobile (can also be setup with AT&T), Straight Talk, and Boom! Mobile. For AT&T there's Cricket Wireless, Boost Mobile, and Consumer Cellular.
While still a T-Mobile MVNO, Mint Mobile is the last carrier I know of you can setup without your real name, plus their rates are pretty reasonable. Additionally, having a Mint plan while also using JMP Chat is a relatively easy approach to have pretty solid privacy on mobile. Data via Mint and talk/text via JMP + Signal segregates your data use from talk/text. JMP encrypts everything on their and too, and they're based in Canada. Meaning you'll get stronger user consent requirements for marketing BS and any US request for the user data is more complicated, so it will take longer than for a US based company.
