On mobile I didn’t see an option to change the head or hair style. Also some components were too small to see on mobile when selecting, mainly eyes and mouths. See how small they are inside the circles to the right in the image you posted?

If you rotate your phone it's there. But yea, small bug on vertical view on mobile with some missing options. The horizontal view (background) doesn't take up the full height either.
