Barcelona. Beautiful city, nice coworkings, fast internet, comparatively cheap accommodation, great culture, amazing food, hot summer, mild winter, beach and sunbathing for half the year, mountains and skiing for the other half. Not much more that you could ask for.

What's the rent like for a nice 1 bed apartment in a city and in the countryside? Everytime I check I feel like I get silly prices they use to snare naive digital nomads

Palermo in Sicily. There is an expat community, the weather is good and it is cheap.
I think Poland is a hidden gem. Most of the major cities are great with beautiful old towns. Very developed with a lot of conveniences and amenities yet very affordable and I like the food/culture/people.
Poland is cool, winters super cold 🤭

It comes down mainly to different places in France, Spain and Portugal. If you have further preferences (beach, nightlife) you can add them and further drill down.
If you are good with the cold, Armenia is very affordable. Near Yerevan, like Artashat, is a good idea.
