Jupiter is like the bouncer to club earth where he tells feisty comets “NOT ON THE LIST.” Sometimes the comets sneak him 50 dollars and the comet gets to blow up dinosaurs and stuff though.

From what I remember, Jupiter also serves as a massive gravitational shield for asteroids that might head towards planets on the inside of Jupiter's orbit.

Speed isn't the factor being multiplied here, it's fuel efficiency. It would be much faster to give the probes enough delta-v to handle flying straight (via a parabola) to their ultimate destination then to bother wasting time with gravitational assists. But the cost in fuel would be astronomical. Literally, even.
