What kind of applications would you self host on an android phone though? I have a few old handsets and I'm struggling to think of services that I would want to run on one

The same you'd host on a pi or similar. Your local music library, maybe?

fingerd, a Web service, local mail server, etc.

I remember when we thought all of this might be self-hosted on PCs. But due to most peoples' Internet connections not being always-on it wasn't very useful. Then when they were, most people just... didn't anyway. I still like the idea though.
