Tissot, Hamilton, Christopher Ward, Seiko, the list goes on. Some of the boutique stuff like deep blue sits right under that for tritium and a chronograph.

Swatch has schools around the world. For example they have one in Miami for a 1 year horology course. They offer 2 year courses in Switzerland. I never looked into cost etc but it's worth a look instead of an apprenticeship, you'll have a piece of paper from swatch group.
Aim big or aim achievable? Big Patek Grand Complications, I'll never own that watch. Grand Seiko spring drive I really like the cherry blossom but it's pink. They keep those on limited release so whatever spring drive is available at the time.
