I go to a couple of photography forums, and they only allow 1600px on the widest side, so I set LRC to export at that size. however, when I purposely process an image for IG, I still leave it at 1600px, but I crop it to 1:1..ish. I also tend to oversharpen just a hair for IG, as I find you lose just a bit of IQ when it uploads there.
