If you’re comfortable expanding your budget a little I’d go for an Omega Seamaster. Alternatively I’d look at Christopher Ward. Depending on style of watch you like a bunch of $2-3k options esp on secondary market, though in my experience going up to $4-4.5k opens up a lot of possibilities.

I own and admire watches at prices ranges from $1k to $100k and there is a distinct difference in quality and finish as the price goes up. That is not to say that $1k watches are low quality, or that the more expensive watch is always “better”, but there is no doubt about a difference. IMO some brands and models deliver consistent value above their price point, some are arguably overpriced on a quality basis, but definitely there are still many level of distinction above $2k - $3k. Material and method alone drive some of that. Gold & platinum cases, enamel dials, hand turned guilloche that very few manufacturers can do, highly engineered complications, movement finishing…these are real differences.

How did you like the thickness and weight on the JLC? It’s much thinner and lighter than a Speedmaster.

I have both a Speedy moon phase and a JLC MUT moon. They’re both wonderful watches but to me quite different. The JLC to my taste is a dress watch and much more elegant. The Speedy is a sports watch and better suited to daily wear. I think on smaller wrists the Speedy probably wears better on a strap.

Nice collection. Another red dial watch you may like is the Omega Seamaster boutique edition in red. It’s got a great, deep fire engine red color that is pretty unusual to find on dials in my experience. Very classic design that makes it versatile across dress and somewhat less dressy occasions.

Amazing choices. In the end all 3 are great so you can’t go wrong.

I have two of these (JLC & VC) and some Lange, though not 1815. I love JLC but I think the VC or Lange are on another level. Btw the 1815 and Fiftysix my preference would depend on model. For the base models or the annual/complete calendar I’d prefer the Fiftysix design. The 1815 up/down and VC day/date is a toss-up, I’d maybe lean 1815. The 1815 rattrapante or chronograph are in a class of their own among this group.
