I've accidentally missed things in the scanner, both because the scanner messed up and because sometimes I fuck up. It happens. Just ask to see the receipt and point out the missing items. Problem solved.
If you're too scared to ask to see a receipt from someone because you think they're dangerous, then maybe it isn't worth risking a confrontation between them and the police in the parking lot over a couple dollars' worth of groceries.
