I can sincerely vouch for Vintage Story. It's a bit confusing at first, but it's a very comfortable learning curve. And once you got the hang of it it's a very chill experience. Also, thanks to the integrated mod database you can install mods in the console!

Also, while Schedule 1 is very unique in its gameplay, I still feel it needs quite a bit of development time before I would recommend it myself. Moving product around your locations and the easy to cheese Police are some of the biggest community gripes at the moment.

My best steel run so far is 42h 38m.
