I think prions may become an issue as they reside in the compost material long after the human is gone
It would depend on the type of composting. I am also unsure what the mechanism for transmission would be from soil to plant to human. If this is an issue, I suspect it would have come up before through infected animals.
I wonder why prions never bothered Jeffery Dahmer
