I love these kinds of edits and I can’t for the life of me figure it out. I work in capture one and photoshop mostly. I’ve searched YouTube for good tutorials on commercial or editorial style food editing and can’t find anything remotely close. Help 🙏

You mean the placement and colour schemes? That's just planning my friend! Take your time and tell a story, look through food magazines and note what they're doing, what's the main thing you want to show off, how do you draw your viewers eyes to that.

Or there’s a high pass filter done on the merged photo and set at multiply and between 60-80% opacity

I do a much lower opacity sometimes if a label isn’t looking crispy enough due to printing

Like others have said - lighting here is doing the heavy lifting, hard key, and potentially a little bounce fill in shadows - however the post work you’re after is pretty easy to achieve in C1 and it’s all over the place in food and bev work right now - boost your shadows, drop your highlights a little and crank up the clarity slider (maybe select something other than “natural” for a crispier 1970s Betty Crocker jello mold cookbook look.
