Can anyone recommend one that is compatible with this model server? If I understand correctly, I won’t be able to boot from them but they will still present properly to the OS. Thanks!

I've used several different pcie to nvme adapters, including cheap Amazon ones. They're doing pretty much nothing except connecting the pcie traces from the NVMe drive to your pcie interface.

They've all been reliable and work well.

Sabrent ones are fairly cheap and work well.
