I'm keeping three headphones: an HD600, Dt990pro and DT770pro, and one iem (the Moondrop Chu, which I only use during exercise/bike rides). I like having two differently tuned open backs (which is what I use for most of my listening and for work), and a comfortable closed-back for times when it's noisy at home. As for iem's, I'm already satisfied by the Chu (and if it breaks, it's relatively cheap to replace).

I bought a DT770pro, a DT990pro, a Moondrop Chu, and an HD600. I think I'm stopping here (the DT 990 pro and the HD 600 meet my normal home-office and leisure use, while the DT770 is there when I need better isolation) , but will hopefully be able buy replacement parts as these age with me.
