I've seen the same sort of behaviour with netboot (though it's more iPXE) though in my case it was an E1000 under Proxmox (and with other virtual cards).
It seems a common problem with iPXE where it hangs at initialising devices but there doesn't see to be much in the way of solutions.
umm read the forum?
try google? (which reddit isn't).

Gives you a few more cores to play with down the track if you need them plus better performance from the get go.
Is the QNAP disk shelf known to work with non-QNAP hardware?
It might use a standard cable and have a HBA but doesn't mean they hadn't taken steps to make it proprietary.
before you convert, install the virtio drivers and in the VM configuration make sure the disk image file is attached as SATA0.
The virtioSCSI is a better drive but Windows doesn't know the device at the first boot after the migration. It needs to boot, find the device and configure the drivers.
and need to ensure the image contains all the partitions from the original drive.
At the same time you need to ensure it’s a quality psu.
Saving a few dollars in freight by going to a lighter weight psu could end costing more if it dies or causes issues.
consumer AMD/Intel chips will offer better performance than the Xeons and use less power doing so.
4RU rack mount case will give you more options with GPU because they can take full height cards (well maybe not a 4090).
Case height with 4RU will allow you about 155mm of height to fit your cooling solution/
Will also you to have a number of drives and use 80 and 120mm fans which will be quieter.

you'd have to use a video capture unit such as used by game streamers etc.
But what are you trying to achieve?
Unless there's some of sort of repeating error there's not going to be anything displayed the console. It will simply sit at the login prompt with the MOTD telling you where access the webgui.
There won't be any output from any of the VMs or LXCs
Otherwise you might as well have a SSH shell open.
it's unlikely you'll find something to fit that rack.
They're designed for networking equipment - not PC hardware and outside of some 1RU units, there's very little that's going to find into 17".
Some-one posted looking for a 16" deep case yesterday (factoring in power cables etc that's about as deep as the case could be). There might have been suitable response in there.
