You might already know this since you brought up the title, but the CFL literally does this and it's awesome.

It still ends up being a QB most of the time, but not literally every time like the NFL

MVPotQB = Most Valuable Player other than Quarterback

This discussion me of an award r/Barca and r/Soccer had when Messi was at Barcelona. MotMotM = Man of the Match other than Messi. He was always the best player on the pitch but other players deserved credit too.
