Depends on the watch, my garmin is definitely utility… I use it for timing and mapping runs, safety when hiking etc.

All three. I like the way they look, I like the tech, and looking at my wrist is easier than pulling out my phone. Plus I use them a lot instead of a timer on my phone.
Jewelry - it's why I don't care about movements or history or anything like that.

Given the availability of the time in our phones, computers, etc I’d say watches are an accessory/jewelry (kinda the same thing imo).
I say that as someone who wears a watch with the specific goal of looking at my phone less often.
I do a lot of hiring, and use my watch as a way to check the time without using a screen, to make sure I'm not running over but also not being distracted while interviewing a candidate. My watch increases my concentration and is a reminder of the value of time, for both me and others. So I guess, utility?

I don’t often carry a phone so I check my watch for the time and date. I know that’s rare. But definitely accessory too, just something I enjoy having and wearing.

Accessory according to your definition. If I'm with someone I find more respectful to check the time on my watch than on my smartphone.
All utility for me. I try to have a conscious separation from tech and screens in general (I work at home in front of the PC all day), so I like to go for walks and do things outside of work without always having my phone on me. So, a watch is still necessary.
Watches are both Jewelry and Accessory for me. Looks good, adds to my enjoyment and has some functionality. I wouldn't call it utility since anything the watch does for me, other devices (that are usually on me) can do better.

Anyways, like everyone else already told you, it's all 3. I wouldn't wear them if they had no function, nor would I wear them if they did not look good.
There should be an option for “toy” which describes me and many other enthusiasts I’m sure. I’ve always loved mechanical things since I was a kid (cars / airplanes etc.) being into watches is an extension of this for me.

Some people wear stuff because it makes them feel awesome when they wear it which then gives them more energy. So I guess that’s utility
In your definition, it's a combination of jewelry and accessory to me. Not really a fan of smart watches and try to minimize time on my phone. I find a mechanical watch both pleasing to look at and functional.
I have a few different watches I'll wear depending on what I'm wearing and/or what I'm doing. While there is a utility aspect to my choice. Wouldn't wear a dress watch when doing something that requires me to work with my hands, and sometimes it's convenient to have a rotating bezel to time things when I'm multitasking. Could I use my phone for time and timer functions? Sure, but in general, I find whole reaching into your pocket and taking out your phone bothersome and too close to also checking notifications and other crap, when all I needed was the time/date.
The other side of my watch choice is that of jewelry. I choose what to wear because I think it looks good, and enjoy it adding more to my outfit. I often enjoy just looking at my watch on my wrist as well to amire it. I find the sweeping seconds hand, and sometimes other complications, very pleasant to just watch tick a way for a little bit. A watch is a piece of art, and marvel of craftsmanship and engineering. I love seeing it all come together in such a small device.

There’s no utility in a luxury watch that can’t be delivered by a 100-200 quid quartz one (and that’s allowing for a lot of flexibility). So like, your Tudors, Balls, Omegas etc have no utility that these don’t have (except in very niche circumstances).

Saying luxury watches have no utility beyond that provided by a quartz watch admits that luxury watches provide utility. Watch enthusiasts will generally appreciate watches for a variety of reasons all while getting utility from the watches.
Definitely not jewelry, I like my watches to be utilitarian. Most of my collection is sporty and daily wear type stuff. I don’t even have a dedicated dress watch at the moment because my work attire is so casual and I prefer more versatile pieces. I work as a teacher btw, so ymmv depending on people in different professions and circumstances.
Traditional watches are completely useless in modern day society. They are jewelry.
By your definitions, I'd have to say accessories. Certainly I wear my watches as jewelry, but even with a phone and a laptop on and around me most of the time at work I find glancing at my wrist for the date and time much easier and it's my primary method of checking the time.
