It would really help if you can give us your budget. But that being said, quartz will be less expensive and the brands you listed all have some good lower end options. Also does your dad have any preferences for watches? Colors? leather band or metal bracelet? That would also help others here make recommendations for you.
As others have already mention forget the appreciation aspect. It will help if you can start by doing some looking around on your own and getting a feel for what you like. Some examples:
- Bracelet or Strap?
- Automatic, or quartz?
- Silver, or other?
- Diver?
- Complications?
- Dial color preferences?
- New or Used?
- Chronograph?
Your price range will weed out a lot of options, but there are definitely watches out there you will find. The willingness to look at used will also help, but again, you can find options for new watches in this price rage. Once you have some things you are looking for it will make targeting brands/models easier.

Seiko makes solid wathces. This is a good choice. If you are looking for other options, not better, just options. Take a look at Longines, Oris, Frederique Constant in the same price point.

Thanks, Yes, the GS White Birch Highbeat is on my shortlist. I've looked at the Nomos, but doesn't really appeal to me. I think the super small lugs just don't really appeal to me visually. But otherwise it looks like a very nice watch.
