Two to three is perfect for me. My philosophy is: if it feels like a a watch isn't being worn enough, it doesn't belong, and it it's not clear which watch should be worn for a particular day or event, there's too much overlap and one should probably go.
I have these two plus a gshock. I just wish their lug widths were the same!
I'd look at some used Grand Seiko quartz. SBGX269 perhaps.

Looks good. Might be able to find cheaper. Mechanical day/dates are annoying though unless you're gonna keep it wound.
I think you either need to buy it or pick a watch, but wait months before buying. It might help to see it in person. You don't need one of every type of one of every dial color. So get your favorite type in your favorite dial color. Think about what works for you, rather you working for it. I learned quickly that I don't like mechanical watches. Erring on the smaller size is better looking and more comfortable as the watch slides around on the wrist, for example.
I like a bit of visible wrist after the lugs. It the lugs reach the end of my wrist or (god forbid) extend beyond, easy no for me. I think this one borderline works, the watch is hanging a bit to the outside in the photo, if you centered it on the wrist I imagine it would look better.
Grand Seiko or Citizen Chronomaster. Don't be afraid of the used market!
Have never seen one IRL, but aesthetically it just fits the bill for a one watch. Get it with the bracelet.
It's baller and need not be saved for dress occasions only.
