Their flavour is probably based on the Gros Michel variety of bananas, which was mostly wiped out by a blight in the 1950s. Most bananas these days are the Cavendish variety, which doesn't taste the same.

Are these the ones that produce epic levels of mucus as defense? I saw a video once of a frog try to eat one of those and it eventually gave up after its mouth was so full of mucus it couldn't swallow

Banana slug mucus makes your tongue go numb, and they aren't half bad when cooked/cleaned properly! (I went to a living history camp as a kid)
