It sounds like that one Asterix movie where they had to do the twelve tasks.
In one task Obelix went into an all-you-can-eat restaurant and had to eat everything he was given. He did. Then the cook ran out crying that he has nothing else to serve and he is now ruined.
Obelix went out like, "Such a weird cook; he gave me appetizers and left!"
Those roast boars always looked like the tastiest thing ever.

Completely unrelated, but this guy does reviews of Chinese buffets and he is hilarious. He is on like day 80 something, and he is doing it until he gets food poisoning.

There was one like 3 or so videos ago that I was sure would end the series, between the warm sushi, curdled Mac and cheese, and mystery meat. But nope, I think he has built an immunity.
My mother was like that, ate gum off the sidewalk as a kid. Had an iron stomach as an adult. We would all be sick as dogs from bad food and she would not only be fine but eat the left overs the next day.

They owed him food. The deal is that they owe him all he can eat.
I'm torn between agreeing he abused the "all you can eat" concept, and the fact that people who eat less than average aren't given a discount. Overall I think this guy is an outlier and should be factored into the business plan.
They have restaurants where people who eat less are charged less and those who eat more are charged more. It's called a la carte.
There are also buffets where you can be charged based on how much you eat , they're called "buffet by weight" or by the plate.
If you don't want people to eat all they can eat, don't open an all you can eat restaurant.
Generally guys like this are factored into the business plan, but sometimes people try to outsmart (or in this case outeat) the restaurant.
I remember reading once that crab legs were often a loss leader food. The restaurant offered crab legs to pull people in despite being too expensive for the buffet. Most people ate a few and then filled up on cheaper foods. Some people however would just eat crab legs.
I remember another example of this where a customer stayed from lunch until dinner. Not only did lunch cost less, but now that's two meals. The fix there was a three hour table limit. Basically affects no one, except the exceptions.
I see nothing wrong with a time limit - it just enforces the idea that you're paying for one meal. But the more I think about it, normal restaurants serve you the amount they want you to eat. All you can eat restaurants offer a distinctly different product, which it seems like they should be prepared to deliver even when it's occasionally more than they prefer.
Sensible time limit seems fine, though, I see it implemented in a nearby buffet like that, and I think they have time slots in schedule, which allows them to clean up/refresh food in between the time slots, too
Golden Carroll does it All You Can Eat breakfast, lunch, or dinner. Basically eat all you want but if they switch from lunch to dinner your time is up.
But Chinese restaurant are only opened (at least around here) from noon to 8pm. And never seen sign accept once in a sushi one that had a sign for 3 hour limit. Which to me was more than fair.
That what these places should have. Set time limits clearly posted.
My friend got him beat. He once went to Golden Carroll for breakfast they finally kicked him out during the dinner service. Only reason he got away with it so long is he would switch tables also tip wait staff real good. Besides doubt they gave a shit. But management sure hell did. He almost got banned. But when me and brother threaten not to ever return if he was they relented. Besides by then he was to broke to come without us paying so that wasn't ever going happen again.
Yet it is cool crazy story and amazing when you learn it true.

This feels penny wise dollar stupid, by the restaurant.
If I go into an all-you-can-eat restaurant, and a person like this guy isn't there being treated like royalty for being a regular, I know the food, and the vibe, will suck, and I'm not coming back.
The whole thing reeks of bad management, by an owner or manager who has no idea what line of business they're in.
It's amazing how many businesses are operated like that. There was an old school arcade near me and it closed down a few years ago because it wasn't making money, but that was largely their fault, it didn't advertise itself properly, didn't sell food or drinks (apparently to protect the machines, which I get, but also at the same time it's also incredibly dumb) and was only open normal business hours rather than after schools and on weekends.
It got to the point where I was starting to look at taking out a loan from the banks so I could buy the idiot out, because the basic idea was actually great. Then covid happened and that was the end of that.

My best friend was asked to leave Ci Ci Pizza because "he had enough " when pointed out the All You Can Eat sign the franchise owner got angry. These fuckers don't actually believe in all you can eat they just don't realize how mucb average American eats.
Also the guy was also a foreigner so kinda makes sense. I mean do they have all you can eat buffet anywhere else but America?
There is this cafe in my vicinity in Norway that does that. It was situated on the main highway going south from Oslo, but ended up a bit out of the way when the new modern multi lane road was built. They do decent food, nothing exceptional. Two or three main courses with associated sauces, selection of deserts, selection of steamed vegetables. You have to drive to get there and it seems well visited three few times I have been there tbr last five years.
They do have a good reputation for catering. Think that's what keeps them "real" proftlitable.
In Estonia we call it "rootsi laud" or "Swedish table". You can just keep on going to refill your plate with anything you want. On average people pay for more than they eat so the few outliers like me stuffing tons of salmon on my plate don't make the place bankrupt.
I think hotel breakfasts do this in most of the world, but here we also have it on ships, where the food is actually good

They most certainly do have places that offer unlimited amounts of food for a fixed price, but not necessarily in the form of a Chinese buffet and often using a different name for it, in for example Belgium it would usually be called à volonté while in for example Switzerland it would usually be called à discrétion.
It's a fairly common thing in France, especially for asian theme restaurants in my experience.
Pizza Hut in the UK has all you can eat. That's the only place I've ever seen it done though, unless you count free drink refills at IKEA.
They used to have an all you can eat lunch buffet at the ones in the US too.

I remember doing a hike with my dad on a route that briefly overlapped the Appalachian Trail. We got to talking with a group of hikers who were doing the whole trail (~2200 miles) and they said they burned so many calories each day that it only made financial sense to eat at all-you-can-eat restaurants, and they claimed that at least one such restaurant offered to give them their money back to leave, after the owner thought they were eating eat too much food.
